Amazon.com Review Hard cheeses are odd in that the thinner they're sliced, the more flavorful they are. And while it might not seem so, thinly slicing cheese is a difficult task. Cheese planes, in one smooth stroke, take the guesswork out of how to achieve the perfectly sliced piece of cheese. This model has a very satisfying, 2-1/4-inch-long blade and a solid, brushed steel handle that makes the instrument easy to grasp and use. An eyelet at the handle's end allows for convenient, hanging storage. --Sally Bergesen

cheese pleater July 5, 2008 Don't know what's the matter with this plane. It's nice and sturdy. But it hardly cuts the cheese at all, just wrinkles it up into ugly pleated hunks.

It's a lot better than most wire cheese slicers, which I can never get to work properly. It cuts cleanly, even cheese that most cutters would mash to bits.
Sturdy, clean slicing plane November 5, 2006 The Hoffritz Cheese Plane is sturdy, and clean slicing. Just the right thickness. It is fairly attractive as well. Recieved promptly and in excelent condition.

We used to have 3 homes, with 3 kitchens and, naturally, 3 cheese planes. The Hoffritz is the easiest to clean--the stainless stell is virtually impervious to permanent stains--and most resistant to bending in use. That last is the key. The more the plane bends, the harder it is to deliver the kind of slices you want. More decorative planes--particularly with wooden handles--should be avoided. They can't go into the dishwasher, and the the guage of the steel, stainless or not, is always inferior to Hoffritz.

When used on semi-soft and semi-hard cheeses (such as mozzarella or cheddar), the performance of this cheese plane is comparable to similar (and much cheaper) instruments. However, where the Hoffritz truly shines is in the arena of hard cheeses. From the stubborn pecorino romano to the crumbly parmesan reggiano, this tool tames them all. Effortlessly peeling off perfectly formed curlicues of dairy goodness with its exceedingly sharp stainless steel blade, the Hoffritz cheese plane is an ideal kitchen aid for those who enjoy the sharp taste of a nice, aged, hard cheese.
